Ingredients

The ingredients are:
  • 7 ounces long grain white rice, dry (1 cup)
  • 1/8 cup olive oil
  • 1/2 cup onion, finely diced
  • 1 Roma tomato, finely diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 2 cups chicken broth
  • 1 tablespoon tomato paste
  • 1/4 cup peas, frozen

How to Make

  • Step 1: In a large saucepan heat the oil.

  • Step 2: When hot, add the rice and onions and saute until the rice begins to lightly brown and turn opaque.

  • Step 3: Add the tomato, tomato paste, garlic and salt to taste.

  • Step 4: Stir and saute until garlic is golden.

  • Step 5: Add the broth.

  • Step 6: Stir together to mix until the tomato paste has completely dissolved.

  • Step 7: Bring to a boil.

  • Step 8: Add peas and reduce heat to low, cover, and let cook for 20 minutes.

  • Step 9: Remove the saucepan from the heat and let it sit for 5 minutes covered.

  • Step 10: Fluff and season to taste.
