Step by Step Method

Step 1

Preheat oven to 375 degrees Fahrenheit.

Step 2

Remove papery skin from garlic head. Keeping head whole; rub oil over garlic head and wrap in foil.

Step 3

Bake for 45 minutes; cool 10 minutes.

Step 4

Separate the cloves and squeeze to extract the pulp.

Step 5

Discard skins and set garlic aside.

Step 6

Place potatoes in a large pot and cover with water.

Step 7

Bring to a boil on medium-high heat and cook for 15 to 20 minutes, or until tender when pierced with a fork, drain and set aside.

Step 8

Heat milk in a small saucepan over low heat until just warm, or microwave in a microwave safe dish until just warm.

Step 9

Place cooked potatoes in a medium-sized mixing bowl.

Step 10

Pour milk over potatoes and beat at medium speed with an electric mixer until potatoes are smooth or mash with a potato masher.

Step 11

Add yogurt, salt and pepper; mix until smooth.

Step 12

Add garlic pulp and stir with a spoon to combine.

Step 13

Season with more salt and pepper to suit taste.

Amazingly good! My son said to be sure and save this recipe!! I didn't have yogurt and used sour cream. My son did add butter to his....I imagine those were really rich! Thanks for sharing.....made for FYC tag game.

Wonderful potatoes that I served with pork chops slow cooked in cream of mushroom soup. Used two smaller heads of garlic since it wasnt looking the best at the grocery store. Didnt miss the butter I usually add to my potatoes and hubby enjoyed the fresh roasted garlic flavor. Made and reviewed for Pick Me! Recipe Tag Game.

I love that added flavor of roasted garlic with potatoes. I used fat free Greek yogurt. I only made 1 potato so I omitted the milk, the yogurt was enough to lighten the mash. I always have some roasted garlic in the freezer so this recipe was a snap. Thanks Bea for the perfect side dish to go along side fried liver

Mmmmm QueenBea your mashed potatos were sooooo good I love anything garlic, a change I did make was used sour cream instead of yogurt, I'm going to remake these for xmas, thanks QueenieB
