Step by Step Method

Step 1

Sprinkle smashed garlic with 1/4 teaspoon salt or to taste.

Step 2

Mince garlic/salt and scrape into a small pile and use the side of the knife to press the garlic and salt together; repeat the process until the garlic/salt form a paste.

Step 3

Place the garlic paste in a small bowl and add the mustard.

Step 4

Whisk in the lemon juice, then slowly whisk in the olive oil to combine.

Step 5

Add a few grindings of pepper; taste on a piece of lettuce, adding more salt, lemon juice or Dijon as desired.

Step 6

Store in an airtight glass container in the fridge for up to 1 week.

Step 7

Whisk again just before serving. to re-emulsify.

After reading the ingredient list I knew this was going to be fantastic!!! I used it in potato salad and to marinate chicken thighs and Oooooooh YUM..... This will be in our regular rotation now. Thx for sharing this here.

Makes a wonderful flavored dressing! Everything was just right, and I did add Parmesan cheese in too. Very delicious and still have some left for the week!
