Step 1: Sprinkle smashed garlic with 1/4 teaspoon salt or to taste.
Step 2: Mince garlic/salt and scrape into a small pile and use the side of the knife to press the garlic and salt together; repeat the process until the garlic/salt form a paste.
Step 3: Place the garlic paste in a small bowl and add the mustard.
Step 4: Whisk in the lemon juice, then slowly whisk in the olive oil to combine.
Step 5: Add a few grindings of pepper; taste on a piece of lettuce, adding more salt, lemon juice or Dijon as desired.
Step 6: Store in an airtight glass container in the fridge for up to 1 week.
Step 7: Whisk again just before serving. to re-emulsify.
