Ingredients

The ingredients are:
  • 1 garlic clove, smashed
  • Kosher salt
  • 1 tablespoon Dijon mustard (plus 1 teaspoon, plus more as needed)
  • 60 ml lemon juice (1/4 cup, plus more as needed)
  • 120 ml olive oil (extra virgin, or canola oil, 1/2 cup)
  • Freshly ground black pepper

How to Make

  • Step 1: Sprinkle smashed garlic with 1/4 teaspoon salt or to taste.

  • Step 2: Mince garlic/salt and scrape into a small pile and use the side of the knife to press the garlic and salt together; repeat the process until the garlic/salt form a paste.

  • Step 3: Place the garlic paste in a small bowl and add the mustard.

  • Step 4: Whisk in the lemon juice, then slowly whisk in the olive oil to combine.

  • Step 5: Add a few grindings of pepper; taste on a piece of lettuce, adding more salt, lemon juice or Dijon as desired.

  • Step 6: Store in an airtight glass container in the fridge for up to 1 week.

  • Step 7: Whisk again just before serving. to re-emulsify.
