Step 1

Prepare the rub: Combine the rub ingredients in a small bowl; reserve 2 teaspoons for garnish. Press rub mixture evenly onto steaks.

Step 2

Salt steaks; place on grill over medium,ash-covered coals. Grill, covered, for 11 to 14 minutes (or over medium heat on a preheated gas grill for 11 to 15 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.

Step 3

Carve steaks into slices. Sprinkle with reserved rub.

These steaks came out nice and juicy with charred edges, just how we like them. Cut them a little thinner than the recipe called for and skewered them with bamboo sticks.
