Step by Step Method
Step 1
Rinse the mushrooms in cold water and spread on towels to dry.
Step 2
Finely chop the mushrooms by hand or in a food processor.
Step 3
Melt 4 tablespoons butter in a skillet and add the mushrooms.
Step 4
Cook until they change color and liquid forms.
Step 5
Sprinkle in seasonings and stir.
Step 6
Add Wondra flour one tablespoon at a time until the mixture thickens.
Step 7
Remove from the heat.
Step 8
(May be stored in a covered container and refrigerated until ready to make sandwiches.)

Preheat a griddle over medium heat.
Step 10
Lay a piece of wax paper on the counter and spread both sides of each bread slice with butter.

Spread 2 rounded tablespoons of mushroom mixture on four of the buttered bread slices, then cover each with another slice of bread.
Step 12
Place on the griddle and cook until the side facing the griddle is golden brown, then turn with a spatula and cook the other side until golden brown.
Step 13
Slice on the diagonal and serve.
