Step 1: Rinse the mushrooms in cold water and spread on towels to dry.
Step 2: Finely chop the mushrooms by hand or in a food processor.
Step 3: Melt 4 tablespoons butter in a skillet and add the mushrooms.
Step 4: Cook until they change color and liquid forms.
Step 5: Sprinkle in seasonings and stir.
Step 6: Add Wondra flour one tablespoon at a time until the mixture thickens.
Step 7: Remove from the heat.
Step 8: (May be stored in a covered container and refrigerated until ready to make sandwiches.)
Step 9: Preheat a griddle over medium heat.
Step 10: Lay a piece of wax paper on the counter and spread both sides of each bread slice with butter.
Step 11: Spread 2 rounded tablespoons of mushroom mixture on four of the buttered bread slices, then cover each with another slice of bread.
Step 12: Place on the griddle and cook until the side facing the griddle is golden brown, then turn with a spatula and cook the other side until golden brown.
Step 13: Slice on the diagonal and serve.
