Step by Step Method
Step 1
Heat the olive oil in a large frying pan. Add the onions, carrot ,garlic, and sweet pepper.
Step 2
Saute until the onion is golden.
Step 3
Add beans to the onions and garlic, along with water.
Step 4
Let simmer for about five minutes.
Step 5
Add the cilantro and salt and pepper to taste.
Step 6
Continue to heat for several minutes.
Step 7
Add the rice, stirring to mix well.
Step 8
Add more water if the mix is too dry.
Step 9
Top with sour cream
