  • 1 can (15 ounces) pinto beans
  • 1/2 cup water
  • 1 cup cooked white rice
  • 1/4 cup carrots,grated
  • 1 tablespoons oil
  • 1/2 cup onions,chopped
  • 1/4 cup red bell peppers,chopped
  • 1 clove garlic,smashed
  • 2 tablespoons cilantro,minced
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 4 ounces sour cream

How to Make

  • Step 1: Heat the olive oil in a large frying pan. Add the onions, carrot ,garlic, and sweet pepper.

  • Step 2: Saute until the onion is golden.

  • Step 3: Add beans to the onions and garlic, along with water.

  • Step 4: Let simmer for about five minutes.

  • Step 5: Add the cilantro and salt and pepper to taste.

  • Step 6: Continue to heat for several minutes.

  • Step 7: Add the rice, stirring to mix well.

  • Step 8: Add more water if the mix is too dry.

  • Step 9: Top with sour cream
