"I admit to not being a fan of curry. But I think the sweetness of the fruit and honey is this recipe really helps "mellow" the curry flavor for me. This recipe does take a bit of work (chopping and prep), but it is a wonderful recipe to entertain with. Maybe, a card or game night, luncheon, special birthday or occasion; but it is really tasty. It makes a fantastic sandwich. A Hawaiian bread would be nice or an egg bread, but I prefer croissants. But again, use your favorite. Serve with a cup of roasted fennel soup or a creamy, leek soup. These sandwiches I simply garnish with soft Butter or Bibb lettuce - nothing more is needed. And ... you can use a rotisserie chicken or roast your own - either way works fine. This recipe originally came from a small Church cookbook I received from a friend a few years ago. I have tweaked it a bit, but overall, the recipe has remained the same. I don't necessary make this for an "every day" lunch. But, I love to entertain with this recipe."

Step by Step Method

Step 1

Salad ... It does take a bit of time to chop everything, but once that is done; just add everything to a bowl and toss to combine. Then, I like to refrigerate the salad 30 minutes before serving to blend all the flavors. Note: I love to roast my own chicken breasts (bone in) for this, but a rotisserie chicken or any leftovers work just fine. You the method that works best for you.

Step 2

Sandwich ... Add the salad and lettuce to your favorite bread and ENJOY! As I said, I love croissants, but I love Hawaiian or egg bread too; it adds a nice sweetness. You can also toast your bread if you prefer.
