Ingredients

The ingredients are:
  • 3/4 to 1 pound cooked chicken, diced or shredded
  • 4 to 5 croissants, cut in half (or use your favorite bread)
  • Red leaf lettuce
  • 1/2 cup red grapes, cut in half
  • 1/3 of a granny apple, diced fine (skin on)
  • 1/8 cup red onion, fine diced
  • 1 small celery rib, fine diced (leaves too)
  • 1/8 cup golden raisins
  • 1/8 cup dates, chopped
  • 1/8 cup dried cranberries
  • 1/4 cup sliced almonds
  • 1/8 cup unsweetened coconut
  • 1/3 cup mayonnaise (no Miracle Whip)
  • 1 teaspoon honey
  • 1 to 2 teaspoons fresh lime juice (to taste)
  • 1 to 2 teaspoons curry (more or less depending on taste)
  • Salt and pepper to taste

How to Make

  • Step 1: Salad ... It does take a bit of time to chop everything, but once that is done; just add everything to a bowl and toss to combine. Then, I like to refrigerate the salad 30 minutes before serving to blend all the flavors. Note: I love to roast my own chicken breasts (bone in) for this, but a rotisserie chicken or any leftovers work just fine. You the method that works best for you.

  • Step 2: Sandwich ... Add the salad and lettuce to your favorite bread and ENJOY! As I said, I love croissants, but I love Hawaiian or egg bread too; it adds a nice sweetness. You can also toast your bread if you prefer.
