Step by Step Method
Step 1
Rinse the beans and pick out any funny looking bits.
Step 2
Place them into a bowl and cover them with 2 inches of water overnight to soak.
Step 3
Put the beans, water and pork hocks in the slow cooker
Step 4
Cook on low for 4 hours.
Step 5
After 4 hours, add in the tomatoes, onion, garlic, carrot, plantain, scallions, and cumin.
Step 6
Cook for another 4 hours on low.
Step 7
Season with salt and pepper,to taste
