Ingredients

The ingredients are:
  • 1 package (16 ounces) dried pinto beans
  • 4 1/2 cups water
  • 1/4 cup onion, chopped
  • 1 garlic clove ,chopped
  • 1/2 teaspoon cumin
  • 8 ounces pork hocks
  • 2 tomatoes, chopped
  • 1 carrot ,diced
  • 3 green onions,minced
  • 1/2 cup green plantain, peeled & cubed
  • 1/4 cup cilantro, chopped
  • 1 teaspoons salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Rinse the beans and pick out any funny looking bits.

  • Step 2: Place them into a bowl and cover them with 2 inches of water overnight to soak.

  • Step 3: Put the beans, water and pork hocks in the slow cooker

  • Step 4: Cook on low for 4 hours.

  • Step 5: After 4 hours, add in the tomatoes, onion, garlic, carrot, plantain, scallions, and cumin.

  • Step 6: Cook for another 4 hours on low.

  • Step 7: Season with salt and pepper,to taste
