"Everyone here remembers Papa D,who unfortunately passed away in 2012. In his legacy he left behind some wonderful recipes,this is one of his that was posted to ZAAR/Food.com. I wanted to bring it over here for others to enjoy. His description: From Sparkrecipes.com. My review: This recipe was made on 6/18/12 as a part mine and my SO's dinner. I had no choice but to use frozen corn,but other than that the recipe was made as it was written.After cooking the bacon, a bit of chopped onion was cooked in the grease.OMGoodness !!! it was so,so good. :) All I can say is that this will most certainly be made again,but using fresh corn the next time. Step by Step Method
Step 1
This takes a while to prepare as corn must be cleaned of husk and silk.
Step 2
Then slice corn off the cob.
Step 3
Cook 2 strips of bacon. retain 2 tablespoons of bacon grease, add corn and 1/2 cup of water, and 2 tablespoons of unsalted butter and cook till liquid is mostly gone.
Step 4
Season with salt and pepper as desired.
Step 5
Top with crumbled bacon and stir.
Step 6
Can add onions or peppers to enhance flavors.
