Step 1

Combine first 7 ingredients in a large bowl. Combine remaining 4 ingredients in a small bowl, stirring with a whisk. Drizzle lime juice mixture over corn mixture, and toss well. Season with salt and pepper to taste.

Chill at least 4 hours or more before serving. Toss again before serving

I cut the recipe in half and used jar roasted red bell pepper...very tasty salad...I used cilantro...but I do have a friend that is allergic to it so it's nice to see you can use parsley...I served it with tortilla chips...it is so colorful...I'm keeping this close by...made for "Alphabet" tag game at FFF...
