Step by Step Method
Step 1
Shred the carrots in a food processor or on a box grater. Set aside.
Step 2
In a salad bowl, combine the Dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper.

Add the carrots, fresh parsley and scallions (or shallots) and toss well.
Step 4
Taste and adjust seasoning if necessary.
Step 5
Cover and refrigerate until ready to serve.
