Ingredients

The ingredients are:
  • 1 pound carrots, peeled
  • 2 teaspoons Dijon mustard
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 1/2 tablespoons vegetable oil
  • 1 1/2 tablespoons extra virgin olive oil
  • 1-2 teaspoons honey, to taste
  • 1/4 teaspoon salt, heaping or to taste
  • 1/4 teaspoon black pepper, freshly ground, to taste
  • 2 tablespoons parsley, fresh, chopped
  • 2 scallions, finely sliced (or 1 tbsp shallots)

How to Make

  • Step 1: Shred the carrots in a food processor or on a box grater. Set aside.

  • Step 2: In a salad bowl, combine the Dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper.

  • Step 3: Add the carrots, fresh parsley and scallions (or shallots) and toss well.

  • Step 4: Taste and adjust seasoning if necessary.

  • Step 5: Cover and refrigerate until ready to serve.
