French Garlic Mashed Potatoes

Step by Step Method
Step 1
Put potatoes and garlic into a large pan
Step 2
Add enough water to just cover & bring water to a boil reduce heat to medium low & simmer, covered, 30 minutes until potatoes & garlic are very tender.
Step 3
Drain well keeping 1/2 cup water
Step 4
Return to Pam sprayed saucepan
Step 5
Put over low heat for a minute or so to dry out potatoes, shaking the saucepan so they don't stick.
Step 6
Combine milk and butter

Nuke on high for 2 minutes until milk is steaming and butter starts to melt
Step 8
Stir milk mixture and cheese(save some to sprinkle on top) into potatoes.
Step 9
Mash roughly with a fork, especially the garlic

Then beat until smooth with an electric mixer, being careful not to overdo it or they will become gluey.
Step 11
If you need more moisture use potato water

Season to taste

Sprinkle with parsley

Mix
Step 15
Sprinkle leftover cheese over top
