Step by Step Method
Step 1
Clean and cut vegetables into pieces 1-inch long.
Step 2
In a large, heavy saucepan, combine carrots, turnips, onions, celery, leeks, tomatoes, thyme, bay leaf, parsley, salt and pepper.
Step 3
Add consomme and bring to a boil and cook for 5 minutes.
Step 4
Add sausage.
Step 5
Cover and simmer for 1 hour.
Step 6
To serve: arrange vegetables in center of serving dish.
Step 7
Cut sausage into slices 1/2-inch thick and arrange slices in a crown around vegetables.
Step 8
Serve hot.
