  • 6 carrots
  • 4 turnips
  • 1 cup white onions
  • 4 celery stalks
  • 4 leeks, white part only
  • 28 ounces tomatoes (1 can)
  • 1/4 teaspoon thyme
  • 1 bay leaf
  • 2 tablespoons fresh parsley, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 10 ounces beef consomme (1 can)
  • 1 1/2 pounds Polish sausage

How to Make

  • Step 1: Clean and cut vegetables into pieces 1-inch long.

  • Step 2: In a large, heavy saucepan, combine carrots, turnips, onions, celery, leeks, tomatoes, thyme, bay leaf, parsley, salt and pepper.

  • Step 3: Add consomme and bring to a boil and cook for 5 minutes.

  • Step 4: Add sausage.

  • Step 5: Cover and simmer for 1 hour.

  • Step 6: To serve: arrange vegetables in center of serving dish.

  • Step 7: Cut sausage into slices 1/2-inch thick and arrange slices in a crown around vegetables.

  • Step 8: Serve hot.
