"This rice is similar in texture to red or brown rice, with a chewiness to it. I use Lotus Foods brand, which can be found in natural food stores or larger supermarkets. This recipe is adapted from the Lotus Foods website. Great side for salmon or chicken."

Step by Step Method
Step 1
In a large, heavy saucepan with a lid, melt butter over medium-high heat and saute onion until clear; add garlic, rice, half of the lime zest and 1 3/4 cups broth (or water) and bring to a boil.
Step 2
Reduce to a simmer and cover pan. Cook for about 60 minutes or until rice is soft but not mushy. Check and stir occasionally and add more broth if needed.
Step 3
Fluff rice when done and stir in remaining lime zest and Sambal Oelek to taste. Rice will be consistency of risotto.
