Ingredients

The ingredients are:
  • 1 cup dry black rice (Forbidden black rice)
  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, peeled and finely diced
  • 2 cloves garlic, peeled and minced
  • 1 whole lime, zested (divided)
  • 1 3/4 to 2 cups chicken broth (or water)
  • 1 to 2 teaspoons Sambal Oelek (Asian garlic-chili paste-Rooster brand is good)

How to Make

  • Step 1: In a large, heavy saucepan with a lid, melt butter over medium-high heat and saute onion until clear; add garlic, rice, half of the lime zest and 1 3/4 cups broth (or water) and bring to a boil.

  • Step 2: Reduce to a simmer and cover pan. Cook for about 60 minutes or until rice is soft but not mushy. Check and stir occasionally and add more broth if needed.

  • Step 3: Fluff rice when done and stir in remaining lime zest and Sambal Oelek to taste. Rice will be consistency of risotto.
