Step by Step Method
Step 1
Preheat oven to 180 degree C (160 degree C for fan forced).
Step 2
Grease 2 oven trays and line each with baking paper.
Step 3
Combine all ingredients EXCEPT the ice cream in a medium bowl.
Step 4
Drop tablespoons of the mixture onto the oven trays about 8cm apart, spread into rounds you should get 16 biscuits/cookies.
Step 5
Bake for about 10 minutes or until florentines are lightly browned, cool on trays.
Step 6
Spread ice cream equally between half the biscuits/cookies and than top with other half.
Step 7
Serve 1 1/2 florentines with 2 scoops of ice cream as a serving size.
