Step 1: Preheat oven to 180 degree C (160 degree C for fan forced).
Step 2: Grease 2 oven trays and line each with baking paper.
Step 3: Combine all ingredients EXCEPT the ice cream in a medium bowl.
Step 4: Drop tablespoons of the mixture onto the oven trays about 8cm apart, spread into rounds you should get 16 biscuits/cookies.
Step 5: Bake for about 10 minutes or until florentines are lightly browned, cool on trays.
Step 6: Spread ice cream equally between half the biscuits/cookies and than top with other half.
Step 7: Serve 1 1/2 florentines with 2 scoops of ice cream as a serving size.
