Step by Step Method

Step 1

Heat butter and oil and add onion.

Step 2

Cook until translucent.

Step 3

Add garlic and rice.

Step 4

Cook until opaque.

Step 5

Add chili powder and stir.

Step 6

Add chicken stock, tomatoes, herbs and spices.

Step 7

Cover and turn down low simmer cook 20 minutes.

Step 8

Take off heat leaving covered 5 minutes.

Step 9

Take out bay leaf and fluff.

Step 10

Season to taste.
