Ingredients

The ingredients are:
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 14 ounces dry long grain white rice (2 cups)
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 4 cups chicken stock
  • 15 ounces fire roasted diced tomatoes (1 can)
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Heat butter and oil and add onion.

  • Step 2: Cook until translucent.

  • Step 3: Add garlic and rice.

  • Step 4: Cook until opaque.

  • Step 5: Add chili powder and stir.

  • Step 6: Add chicken stock, tomatoes, herbs and spices.

  • Step 7: Cover and turn down low simmer cook 20 minutes.

  • Step 8: Take off heat leaving covered 5 minutes.

  • Step 9: Take out bay leaf and fluff.

  • Step 10: Season to taste.
