Step by Step Method

Step 1

Preheat oven to 375 degrees F.

Step 2

In medium saucepan, bring water, butter and onion salt to boil.

Step 3

Remove from heat and stir in sour cream.

Step 4

Add instant potatoes flakes.

Step 5

Stir gently until soft and moist.

Step 6

Beat briskly with fork, reserving 2 tablespoons of cheese for garnish.

Step 7

Stir in remaining cheese and chives.

Step 8

Pour into a 1 quart casserole.

Step 9

Garnish with reserved cheese.

Step 10

Bake for 25 to 30 minutes or until top is lightly browned.

Step 11

Refrigerate leftovers.

I seemed to have got my measurements incorrect when converting ended up having to add some milk, but it turned our really good in the end. Nice and cheesy and creamy! We have not had instant mash for many years and we really did enjoy this for something easy and different.
