Step by Step Method

Step 1

Preheat the oven to 425 degrees.

Step 2

Brush a nonstick baking tray with a little of the olive oil.

Step 3

Pour the beaten egg into a wide bowl.

Step 4

Put the breadcrumbs (I upped the amount per life is good recommendations )on a plate and mix in the mixed herbs, lemon zest, and a little salt and pepper.

Step 5

Dip each piece of fish first in the egg, then in the breadcrumbs, making sure it’s lightly coated in each and put on the prepared baking tray.

Step 6

Lightly drizzle the remaining olive oil over the top and cook in the oven for 15-18 minutes until golden.

Step 7

Meanwhile, mix the mayonnaise and lemon juice together in a small bowl.

Step 8

Serve the fish sticks with the lemon mayonnaise on the side.

Deeeeeelish! I would suggest upping the bread crumb mixture amount. I made fresh bread crumbs using 2 slices of a good white bread and added about 1 T. of dried parsley and 1 t each of salt and pepper (leaving the lemon zest amount the same). It still wasn't enough bread crumbs for the amount of fish, so I just used store-bought Italian bread crumbs for the rest. The fish sticks using the fresh bread crumb mixture were so good! Great, easy recipe for homemade fish sticks. I served these with some Trader Joe's French fries; which cooked at the same oven temperature. Thank you!
