Ingredients

The ingredients are:
  • 1 teaspoon olive oil
  • 1 egg, beaten
  • 1 cup white breadcrumbs
  • 1/2 teaspoon dried parsley
  • 1 lemon, grated, juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper, to taste
  • 14 ounce cod fish, cut into 12 strips
  • 4 tablespoon mayonnaise

How to Make

  • Step 1: Preheat the oven to 425 degrees.

  • Step 2: Brush a nonstick baking tray with a little of the olive oil.

  • Step 3: Pour the beaten egg into a wide bowl.

  • Step 4: Put the breadcrumbs (I upped the amount per life is good recommendations )on a plate and mix in the mixed herbs, lemon zest, and a little salt and pepper.

  • Step 5: Dip each piece of fish first in the egg, then in the breadcrumbs, making sure it’s lightly coated in each and put on the prepared baking tray.

  • Step 6: Lightly drizzle the remaining olive oil over the top and cook in the oven for 15-18 minutes until golden.

  • Step 7: Meanwhile, mix the mayonnaise and lemon juice together in a small bowl.

  • Step 8: Serve the fish sticks with the lemon mayonnaise on the side.
