Step by Step Method

Step 1

Rinse and drain the lentils.

Step 2

Heat oil and sauté onion, celery, potatoes and carrots for three minutes until softened.

Step 5

Add vegetable stock and bring to a boil.

Reduce heat and simmer for 35 minutes or until the lentils are cooked.

Adding water as needed.

Blend the lentils mixture into a smooth mixture with a hand immersion blender. Or not, I'm leaving whole.

Step 10

Season to taste.
