Step 1: Rinse and drain the lentils.
Step 2: Heat oil and sauté onion, celery, potatoes and carrots for three minutes until softened.
Step 3: Add the lentils and stir for five minutes.
Step 4: Add salt, pepper and cumin and stir for a minute.
Step 5: Add vegetable stock and bring to a boil.
Step 6: Reduce heat and simmer for 35 minutes or until the lentils are cooked.
Step 7: Stirring occasionally.
Step 8: Adding water as needed.
Step 9: Blend the lentils mixture into a smooth mixture with a hand immersion blender. Or not, I'm leaving whole.
Step 10: Season to taste.
