Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1/4 cup celery,chopped
  • 1/2 cup onion, chopped
  • 1 carrot, grated
  • 2 ounces brown lentils, (1/4 cup)
  • 6 ounces red lentils, (3/4 cup)
  • 6 cups vegetable stock
  • 15 ounces (1 can) potatoes, cubed
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt

How to Make

  • Step 1: Rinse and drain the lentils.

  • Step 2: Heat oil and sauté onion, celery, potatoes and carrots for three minutes until softened.

  • Step 3: Add the lentils and stir for five minutes.

  • Step 4: Add salt, pepper and cumin and stir for a minute.

  • Step 5: Add vegetable stock and bring to a boil.

  • Step 6: Reduce heat and simmer for 35 minutes or until the lentils are cooked.

  • Step 7: Stirring occasionally.

  • Step 8: Adding water as needed.

  • Step 9: Blend the lentils mixture into a smooth mixture with a hand immersion blender. Or not, I'm leaving whole.

  • Step 10: Season to taste.
