"Growing up in MI, when Morels were in season ... Mom would always make this for Sunday Breakfast. We went out and found our own morels and ramps, right from our property ... but, there was also a wonderful farm right down the road; that usually had them when they were in season. Ramps and morels, well they were free back then; but, these days, they can cost a pretty penny - but check your local farmers market. When they are in season, they are usually pretty affordable. Now, since you are using fresh ingredients, this is the time to purchase fresh farm eggs - it is definitely worth it."

Step by Step Method
Step 1
Mushrooms and Ramps ... Add the butter to a medium size saute pan, and bring to medium heat. Add the mushrooms and ramps and cook 3-4 minutes, until the mushrooms and ramps are slightly tender. Season lightly with a pinch of salt and pepper.

Eggs ... As I said ... 'Farm Fresh Eggs' are fantastic. Since, this is such a nice dish with fresh ingredients, try to use the farm eggs. Now, the first thing, is to reduce the heat to medium low. You want to cook the eggs slowly. Add the eggs to the pan, right with the mushrooms and ramps; and, saute very slowly, stirring often - until creamy and slightly set. You don't want to over cook them. Cooking the eggs with the mushrooms and ramps gives them fantastic flavor.
Step 3
Finish and Serve ... Remove from the heat before the eggs are overdone, season with the chervil, and any additional salt and pepper if necessary. The morels and ramps are the star - so, don't over season. This is fantastic served with fried potatoes, and maybe - a fresh citrus salad. ENJOY!
