Step by Step Method

Step 1

Whisk together eggs, milk, salt and pepper.

Step 2

Heat 1 tablespoon butter in a medium skillet over medium heat. Add eggs to skillet. Cook without stirring until egg mixture begins to set around the edges. Sprinkle evenly with ham. Using a spatula, lift and turn the egg mixture until it is cooked through, yet is still moist. Remove from heat. Gently place cheese slices on top of eggs and allow to melt.

Step 3

Divide the egg mixture into five pieces. Place egg mixture on top of half the toasted English muffin. Top with remaining half of muffin.

These were really good. I used Irish cheddar and subbed sausage links for the ham. Had this for dinner last night instead of breakfast, and it was a yummy combo.
