Ingredients

The ingredients are:
  • 10 English muffins (sliced and toasted)
  • 1 tablespoon butter
  • 6 large eggs (beaten)
  • 1/4 cup low-fat milk
  • 1/4 teaspoon salt
  • Coarsely ground pepper
  • 1/2 cup chopped cooked ham (finely chopped)
  • 4 to 5 slices American cheese

How to Make

  • Step 1: Whisk together eggs, milk, salt and pepper.

  • Step 2: Heat 1 tablespoon butter in a medium skillet over medium heat. Add eggs to skillet. Cook without stirring until egg mixture begins to set around the edges. Sprinkle evenly with ham. Using a spatula, lift and turn the egg mixture until it is cooked through, yet is still moist. Remove from heat. Gently place cheese slices on top of eggs and allow to melt.

  • Step 3: Divide the egg mixture into five pieces. Place egg mixture on top of half the toasted English muffin. Top with remaining half of muffin.
