"I normally don't like recipes made with "Cream of - Soup," But, I do admit, this is really good. This was in a cookbook at one of those 'checkout aisles,' and it is a tasty soup. I added a few herbs, spices, and vegetables to make it my own; but overall, it is a very easy and quick recipe. Now-a-days, you can get some pretty good deals on shrimp; so, just watch for the sales, fresh or frozen will work for this - but you want uncooked shrimp. I serve this traditionally with the oysters crackers and a bit of hot sauce on the side."

Step by Step Method
Step 1
Base ... Add the butter to a large pot and bring to medium heat. Add the onion, leek and garlic and saute for 5-7 minutes until tender. Then add the broth, soup, milk, sherry, pinch of cayenne, chives, and bring to a light boil. Simmer for 10-12 minutes.
Step 2
Shrimp and Cheese ... Add the shrimp and cook 3-5 minutes until the shrimp turn pink. Remove from the heat and stir in the cheese, gently mix to until the cheese is melted.
Step 3
Finish and Serve ... Stir in the parsley, serve, and garnish with oyster crackers and hot sauce. ENJOY!
