Ingredients

The ingredients are:
  • 1 1/2 pounds large raw shrimp, rough chopped (peeled, deveined, and tails removed)
  • 1 medium onion, diced
  • 1 small leek, thin sliced
  • 1 small garlic clove, minced
  • 2 (15 ounce) cans cream of potato soup, low sodium
  • 2 1/2 cups milk (low fat doesn't work well with this recipe)
  • 3/4 cup chicken or vegetable broth
  • 1/4 cup sherry wine
  • 1 cup monterey jack cheese, shredded
  • 2 tablespoons fresh parsley, minced
  • Pinch cayenne
  • 1/2 teaspoon dried chives
  • 2 teaspoons butter
  • Garnish:
  • Oyster crackers
  • Hot sauce

How to Make

  • Step 1: Base ... Add the butter to a large pot and bring to medium heat. Add the onion, leek and garlic and saute for 5-7 minutes until tender. Then add the broth, soup, milk, sherry, pinch of cayenne, chives, and bring to a light boil. Simmer for 10-12 minutes.

  • Step 2: Shrimp and Cheese ... Add the shrimp and cook 3-5 minutes until the shrimp turn pink. Remove from the heat and stir in the cheese, gently mix to until the cheese is melted.

  • Step 3: Finish and Serve ... Stir in the parsley, serve, and garnish with oyster crackers and hot sauce. ENJOY!
