Step 1: Base ... Add the butter to a large pot and bring to medium heat. Add the onion, leek and garlic and saute for 5-7 minutes until tender. Then add the broth, soup, milk, sherry, pinch of cayenne, chives, and bring to a light boil. Simmer for 10-12 minutes.
Step 2: Shrimp and Cheese ... Add the shrimp and cook 3-5 minutes until the shrimp turn pink. Remove from the heat and stir in the cheese, gently mix to until the cheese is melted.
Step 3: Finish and Serve ... Stir in the parsley, serve, and garnish with oyster crackers and hot sauce. ENJOY!
