This is very easy to prepare and it's a hearty lentil stew...it's packed full of veggies and has a nice Italian flavor...I tossed in some cubed ham for added protein...We enjoyed it for dinner and for lunch the next day...plus there's enough for at least one more good size serving...made it for "WOTM" tag game...
