Ingredients

The ingredients are:
  • 1 cup dry lentils
  • 3 1/2 cups chicken broth (I use College Inn)
  • 1 (14 1/2 ounce) can peeled Italian tomatoes--cut up
  • 1 cup peeled chopped potato
  • 1/2 cup chopped carrots
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery---optional
  • 1 tablespoon dry parsley
  • 1 tablespoon dry basil--crushed
  • 1 clove garlic---minced
  • Dash pepper

How to Make

  • Step 1: Rinse and drain lentils.

  • Step 2: In a saucepan combine the lentils and all the rest of the ingredients; simmer for 45-50 minutes till lentils and veggies are tender, stirring occasionally.
