1 (14 1/2 ounce) can peeled Italian tomatoes--cut up
1 cup peeled chopped potato
1/2 cup chopped carrots
1/2 cup chopped onions
1/2 cup chopped celery---optional
1 tablespoon dry parsley
1 tablespoon dry basil--crushed
1 clove garlic---minced
Dash pepper
How to Make
Step 1:
Rinse and drain lentils.
Step 2:
In a saucepan combine the lentils and all the rest of the ingredients; simmer for 45-50 minutes till lentils and veggies are tender, stirring occasionally.
