"Easy and quick to prepare; and, always a family favorite. But, don't skip the cracker topping, it's the best part! Great for potlucks too. I love to use smoked ham, especially if you are buying deli ham for this; but, if using leftovers, by all means, use what you have on hand. You could also used a smoked gruyere if you wanted to change things up a bit."

Step by Step Method

Step 1

Chicken ... Season the chicken on both sides with salt and pepper; and, let them rest at room temp to take the chill off.

Step 2

Sauce ... Add the soup, sour cream, and parsley, to a small bowl and mix to combine.

Step 3

Chicken ... Spray a casserole dish with a nonstick spray and add the chicken. If you need to cut them to fit, that is fine; I often do that. Then, add the ham, and pour the soup mixture over the top; spreading it out to cover the casserole.

Step 4

Bake ... Heat the oven to 350 degrees, and bake on the middle shelf for 30-40 minutes, uncovered. Cooking times can vary, depending on the thickness of the chicken breasts.

Step 5

Finish ... Cracker crumbs can be crushed up in a food processor; or, right in a ziploc bag. Simply use a meat mallet, rolling pin, or the bottom of a heavy pot to crush them. Then, add the parsley and paprika, and mix well. After 20 minutes of cooking; remove from the oven, and add the cheese and and cracker crumbs. Return to the oven, and cook another 10-20 minutes, until golden brown and bubbly.

Step 6

Serve and ENJOY! ... It is simple comfort food; and, always a family favorite. As I said, I love to serve white rice on the side; and, maybe a side salad. But, steamed broccoli, or even orzo would be very nice as well.
