Step by Step Method

Step 1

Preheat oven to 350°F.

Step 2

In small bowl, combine flour, baking soda, salt, flaxseed, cinnamon, nutmeg and cloves. Set aside.

Step 3

In medium blow, whisk brown sugar, oil, egg and vanilla until well combined. Stir in flour mixture, a little at a time, followed by carrots and oats. Stir in coconut, raisins and nuts.

Step 4

Drop by tablespoons onto parchment-lined baking sheet; bake 9-10 minutes. Cookies will look slightly under baked; do not over bake in order to keep cookies chewy.

Step 5

Cool completely on wire rack before serving. Store leftovers in an airtight container.

Even though there are a lot of ingredients, these really ARE easy carrot cake cookies. I actually like to measure out lots of spices... I feel like an alchemist and I use up spices that sometimes just sit in my cupboard... and I thought this was a fun recipe to make and to eat. Delicious, chewy cookies. I definitely recommend using parchment paper... these are sticky little guys, but they came off clean and easily with parchment paper. These will be perfect at Easter supper tomorrow. I can't wait to share them... kind of. Maybe I'll keep a few at home for me! Thanks for a fantastic recipe!
