Step 1: Preheat oven to 350°F.
Step 2: In small bowl, combine flour, baking soda, salt, flaxseed, cinnamon, nutmeg and cloves. Set aside.
Step 3: In medium blow, whisk brown sugar, oil, egg and vanilla until well combined. Stir in flour mixture, a little at a time, followed by carrots and oats. Stir in coconut, raisins and nuts.
Step 4: Drop by tablespoons onto parchment-lined baking sheet; bake 9-10 minutes. Cookies will look slightly under baked; do not over bake in order to keep cookies chewy.
Step 5: Cool completely on wire rack before serving. Store leftovers in an airtight container.
