  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground flaxseed
  • 2 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup old-fashioned rolled oats
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup raisins
  • 1/4 cup walnuts or pecans, chopped

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: In small bowl, combine flour, baking soda, salt, flaxseed, cinnamon, nutmeg and cloves. Set aside.

  • Step 3: In medium blow, whisk brown sugar, oil, egg and vanilla until well combined. Stir in flour mixture, a little at a time, followed by carrots and oats. Stir in coconut, raisins and nuts.

  • Step 4: Drop by tablespoons onto parchment-lined baking sheet; bake 9-10 minutes. Cookies will look slightly under baked; do not over bake in order to keep cookies chewy.

  • Step 5: Cool completely on wire rack before serving. Store leftovers in an airtight container.
