Step by Step Method
Step 1
In a large bowl stir together the peanut butter with the sugar, egg and vanilla until well combined. TIP – Do NOT over-beat these with a mixer. Just stir together in a bowl until everything is mixed together. Beating with a mixer releases too much oil from the peanut butter and will change the texture of the cookies. They'll still taste good, but will be almost like a cross between a cookie and a candy.
Step 2
Let the dough rest for a few minutes to "tighten up" a bit.
Step 3
Shape into 1 inch balls and place at least 1 inch apart on ungreased baking sheets.
Step 4
Gently flatten the cookies with the tines of a fork.
Step 5
Bake at 325°F for 15 minutes, or until golden brown.
Step 6
Cool on a few layers of paper towels.
