Dredged Potato Wedges

"I am always looking for different ways to cook potatoes as they are my favourite side dish. I came up with this nice light coating that I really enjoy. A perfect side to any grilled meat."

Step 1

Preheat oven to 450 degrees Fahrenheit.

Step 2

Wash potatoes and cut into wedges; soak in water.

Step 3

Mix remaining ingredients together in a plastic bag.

Step 4

Drain potatoes and drizzle with a bit of olive oil to coat.

Step 5

Toss in potatoes and shake making sure potatoes are nicely dredged.

Step 6

Coat a baking sheet with non-stick spray.

Step 7

Place potatoes on cookie sheet and drizzle with a bit of olive oil.

Step 8

Bake for 20 to 25 minutes, turning after every 10 minutes, until cooked through.

We love potato wedges...but found these a bit on the dry side...so we used a lot of ketchup for dipping...made for one of our appy nights...tagged in the "Pick Me" tag games...

I was a little hesitant of this recipe so I followed it to a T! And............ This is a fantastic recipe, so very good! Easy to make and just so darned good to eat! I think this is my new way of making oven wedges! The family loved them. Thanks Bea.

OMG these are good! I doubled the recipe and after we dredged our potato wedges, I added cornmeal to the leftover flour mixture and we used it to bread our tilapia fillets! This is a wonderful recipe! Thanks Bea!! I put the printed out recipe with my other go to recipes!
