"Dolmades are stuffed vine leaves and are popular throughout the Middle East, Greece and Turkey. In this recipe, it is suggested to serve the Dolmades with additional brown rice. I have done some research on this recipe for the vine leaves and here is what I found ~ Having your own grapevine growing is perfect, you will be able to use fresh vine leaves to make dolmades. I think you can buy them as well. Tips: The leaves from the Sultana grape, also known as the Thompson seedless, is best grape variety with edible leaves used in making dolmades. Use whole, young medium-size leaves with a good light green color that has not holes or chewing marks on them. If the leaves are too small they will tear and large leaves are too tough so a size of about 5 inches is perfect. Use shiny, smooth and avoid fuzzy thick leaves."

Step by Step Method
Step 1
Prepare the tomato sauce by sauteeing the onion in a little oil and butter until golden brown; add the remaining ingredients & simmer over a low heat for approximately 20 minutes, stirring occasionally.
Step 2
Prepare the vine leaves by pouring some boiling water over them and leaving them for a few minutes until softened; drain thoroughly & brush each vine leaf with a little oil, and place on a single layer on a chopping board.
Step 3
Combine the remaining ingredients and divide equally between the vine leaves.
Step 4
Fold into neat parcels and carefully transfer to the saucepan of tomato sauce; simmer on a low heat for 30 minutes.
Step 5
Serve on a bed of brown rice with some of the tomato sauce spooned over the top.
