Ingredients

The ingredients are:
  • Sauce Ingredients
  • 1 onion, chopped
  • Oil/butter for frying only
  • 1 x 440 grams (14oz) can tomatoes, drained and chopped
  • 2 teaspoons brown sugar
  • 1 tablespoon lemon thyme
  • 1 tablespoon tomato paste
  • 3 tablespoons red wine
  • 1 tablespoon parsley, chopped
  • Salt and pepper to taste
  • Vine Leaf Ingredients
  • 12 vine leaves
  • Oil
  • 2 cups cooked brown rice
  • 1 tablespoon chopped herbs, fresh
  • 1 teaspoon nutmeg, fresh, grated
  • Seasoning to taste
  • 2 tomatoes, chopped
  • 1 tablespoon parsley, chopped
  • 2 shallots, finely chopped

How to Make

  • Step 1: Prepare the tomato sauce by sauteeing the onion in a little oil and butter until golden brown; add the remaining ingredients & simmer over a low heat for approximately 20 minutes, stirring occasionally.

  • Step 2: Prepare the vine leaves by pouring some boiling water over them and leaving them for a few minutes until softened; drain thoroughly & brush each vine leaf with a little oil, and place on a single layer on a chopping board.

  • Step 3: Combine the remaining ingredients and divide equally between the vine leaves.

  • Step 4: Fold into neat parcels and carefully transfer to the saucepan of tomato sauce; simmer on a low heat for 30 minutes.

  • Step 5: Serve on a bed of brown rice with some of the tomato sauce spooned over the top.
