Step 1: Prepare the tomato sauce by sauteeing the onion in a little oil and butter until golden brown; add the remaining ingredients & simmer over a low heat for approximately 20 minutes, stirring occasionally.
Step 2: Prepare the vine leaves by pouring some boiling water over them and leaving them for a few minutes until softened; drain thoroughly & brush each vine leaf with a little oil, and place on a single layer on a chopping board.
Step 3: Combine the remaining ingredients and divide equally between the vine leaves.
Step 4: Fold into neat parcels and carefully transfer to the saucepan of tomato sauce; simmer on a low heat for 30 minutes.
Step 5: Serve on a bed of brown rice with some of the tomato sauce spooned over the top.
