Step by Step Method
Step 1
Preheat oven to 200C.
Step 2
To remove the sausage meat from the skin, run a sharp knife down one side and it will pop out.
Step 3
Place the sausage meat in a bowl along onion, carrot, potato, lemon zest and juice, salt and pepper and parsley and mix together well.
Step 4
Place the pastry sheets on a board and cut in half.
Step 5
Lightly brush the join of the cut with egg.
Step 6
Then divide the filling into four and work down the outer edges evenly distributing the mix.
Step 7
Then roll towards the other edge (which has been brushed with egg), cut in half creating 2 sausage rolls, repeat with other 3 sheets.
Step 8
Lightly brush them with eggs and lightly score the pastry two or three times.
Step 9
Place the on a baking sheet and then into the oven and bake until well browned.
Step 10
Serve with a sharp salad if desired - suggested watercress, witlof and pink grapefruit segments.
