Step by Step Method
Step 1
Soak beans overnight
Step 2
Drain
Step 3
Place butter in stockpot
Step 4
Cook onions and celery Together until softened
Step 5
Add garlic
Step 6
Add drained beans
Step 7
With 3 quarts water and the ham hock ,(or bone)
Step 8
Cook the beans and the ham hock for 1 1/2 hours
Step 9
Add the tomatoes and cook another 1/2 hour
Step 10
Add potatoes and simmer until thickened
Step 11
Add parsley last
