Step 1: Soak beans overnight
Step 2: Drain
Step 3: Place butter in stockpot
Step 4: Cook onions and celery Together until softened
Step 5: Add garlic
Step 6: Add drained beans
Step 7: With 3 quarts water and the ham hock ,(or bone)
Step 8: Cook the beans and the ham hock for 1 1/2 hours
Step 9: Add the tomatoes and cook another 1/2 hour
Step 10: Add potatoes and simmer until thickened
Step 11: Add parsley last
