I was a little worried that the low fat mayo would make a difference and not taste as good, but I really did not notice much of a difference at all. It still had a creamy taste and the rice vinegar gave the coleslaw a lovely subtle tang. I did leave out the cilantro and used a bag of premixed cabbage coleslaw blend, but everything else was as per recipe. We really did enjoy this, I served it with steak and salad and it was thoroughly enjoyed by all.
